Raw or JPEG?

I converted over to a fully-raw workflow a few years ago, sucking up hard drive space and slowing down my workflow in an effort to get every bit of pixel quality I could. Now, over at The Online Photographer, Ken Tanaka has a post up on how using the raw format is throwing away a lot of engineering expertise the camera manufacturers have invested in.

He has a brilliant analogy in here:

Using only Raw files from your camera is analogous to buying an uncooked meal from a fine restaurant, preferring to season and cook it at home. This made perfect sense years ago when the chef was still in school. But today many in-camera chefs are James Beard Award candidates. It’s definitely time for a re-think.
